About This Class

Join Chef Josh Breland, new to BSC, for an engaging class celebrating the flavors of summer with cheeses from Lost Peacock Creamery, a local farm where goat cheese is crafted with respect for the animals and the land. Drawing from nearly 25 years of culinary experience, with a background that includes helping to open Chelsea Farms Oyster Bar in Olympia, Chef Josh will guide you through a thoughtfully crafted menu featuring a Cheese Sampler with four-month aged gouda, creamy chevre, and goat milk feta, paired with pickled vegetables. The class will highlight the versatility of these artisan cheeses in a variety of dishes, including Crispy-Fried Brussels Sprouts topped with honey chevre and lemon zest, Roasted Beet Salad with Goat Feta Vinaigrette and Candied Walnuts, and Creamy Mushroom and Goat Cheese Cavatappi. Whether you’re new to cooking or a seasoned home chef, you’ll enjoy learning techniques and flavor combinations that highlight the best of local, seasonal ingredients in a relaxed, interactive setting.

Refund Policy: If BSC cancels a class for any reason you’ll be contacted by phone and receive a full refund. If you must cancel a class, please notify us at least four days in advance for a full refund. Cancellations of less than four days will be given 50% credit toward another class. No credit given without pre-cancellation. However, a prepaid reservation is transferable to another attendee.
