Hasselback Potatoes with Smoked Bacon and Beer

Ingredients

  • 20 small potatoes (about 2¼ pounds), peeled
  • 9 oz. bacon
  • 4 oz. beer
  • Pinch sea salt

Directions

Make as many crosswise ¼-inch slices as possible into each potato without cutting all the way through.

Wrap each potato in bacon, securing with a toothpick, if needed. Place into a roasting pan.

Pour the beer over the potatoes and season with a touch of salt.

Roast for 45 minutes or until the potatoes are tender. Serves 6.
